
~ Baked Salmon with Miso Glaze, Honey yogurt & Mango Salsa ~
Is Mothers’ Day a meaningful day to you too? It is a day for children to reflect on how great mothers are and to show appreciation for all the unconditional love & care showered to them by celebrating the day. Likewise for Fathers’ Day. Although most children always think they understand how great parents’ love are, many can only appreciate deeply of their own parent’s love for them after they have become parents themselves. I am no exception. I think appreciation should not be limited to one particularly declared day from an ancestral practise, for all the sacrifices parents have had for us children have been for a lifetime. Hence, appreciation for them should be shown for a lifetime too.
In conjunction with Mothers’ Day this year, my AMC Malaysia business mentor cum mummy organised a gathering for her customers with the theme, “Colourful Mothers’ Day”. I thought it is a great theme as it reflects well on one’s life as a mother or parent. As much as sacrifices are made throughout parenthood, it brings “colours” to them for a lifetime too.
As my mentor cum mummy has always believed that food on the table has to be colourful when presented at meal time, I am not surprised when she called for the theme. When I saw the event’s photos, although “shaky and blurry” ones as usual (Psst.. please don’t tell her!) posted on her social media, it has inspired me again with her truly colourful and appetising dishes cooked at the event. She baked Fatless Boneless Chicken Thigh with dabbles of honey yogurt and cubed mangoes. Can you imagine the sweet & sour honey yogurt on top of a golden crispy boneless chicken thigh baked fatless surrounded by sweet & aromatic fresh mangoes with a final touch of scallion sprigs on top? I thought the idea was brilliant.
I was all eager to try out one of this creation soonest. I have all the ingredients required at home except for the boneless chicken thigh. As I was too eager to try out the recipe, I substituted the chicken with salmon. Instead of salt & pepper as marinade, I seasoned the salmon with a pre-prepared miso glaze. I also made fresh mango salsa instead of pure fresh mangoes to add more colours to the dish. It all turned out to be satisfactory! Now I can cook my version for my parents the next time I meet them to bring some colours to their life. Perhaps, the next Fathers’ Day!
Salmon with Miso Glaze, Honey yogurt & Mango Salsa Recipe (Serves 3) :
- 300 grams Salmon
- 1/2 tablespoon Miso Paste
- 1 tablespoon Brown Sugar
- 2 tablespoons of Water
- 1 Mango (Cubed 1cm x 1cm)
- 25 grams Red Bell Pepper/Capsicum (Diced)
- 1 stalk Spring Onion/Scallion (Finely chopped)
- 1 tablespoon Fresh Lemon Juice
- 2 tablespoons Greek Style Yogurt
- 1 teaspoon Honey
AMC Healthy Cooking Method :
- Prepare miso glaze in advance by mixing miso paste, brown sugar and water in an AMC 16cm Pot unit or the smallest pot unit of all, lid off on Navigenio heat level “2”. Stir well until mixture caramelised and thicken. Leave to cool. Season glazing all over salmon.
- Prepare mango salsa with ingredients no. 5 to 8 in an AMC 16cm Combi Bowl unit. Chill before serving with the baked salmon.
- Pre-heat AMC 24cm Hotpan unit (lid on) with Navigenio heat level, “level 3” up to 50°C or “Meat Window”. Activate Audiotherm on 50°C or “Meat Window” for readiness indication.
- When Audiotherm beeps, turn off Navigenio & Audiotherm. Remove lid and set pan in up-turn lid.
- Place seasoned salmon into the pan unit and cover it with Navigenio turned upside down. Turn Navigenio on low heat level “-“. Activate Audiotherm and set 12 minutes to bake automatically.
- When Audiotherm beeps, turn off both Navigenio & Audiotherm.
- Dish out the baked salmon on a serving plate.
- In a small bowl, mix yogurt with honey well. Dabble onto salmon.
- Scope chilled mango salsa on the serving plate and serve.
Tips : For baking items like this recipe where salmon is marinated with sugar glaze which charred easily, do not preheat pot/pan on high heat levels. Navigenio heat level “3” would be an ideal heat level.

Turn Navigenio on lower heat level “-” to bake. Activate Audiotherm and set 10 minutes to bake. The Audiotherm sends instruction via bluetooth to the Navigenio and automates the entire baking process.
