~ Chocolate Banana Muffins or Banana Peanut Butter Chips Muffins? ~
Is muffin baking by default a school holiday activity for kids? I think it is a fun activity to introduce to toddler above 2.5 years old. Their tender hands for sure will not over-fold the flour mixture. Even if they do, it does not matter. The muffins will still turn out to be yummy.
This school holiday is the first long holiday for my soon-to-be 3 years old girl. It can be quite bored staying at home for this little one whom has established a routine and is enjoying school. So, I thought we can have a little baking project at home. This morning, we got our hands dirty with baking some muffins. We baked 2 batches of muffins, Chocolate Banana muffins and Banana & Peanut Butter Chips muffins.
I have neither a built-in nor a portable oven specifically used for baking. I use the AMC Navigenio to bake. It is a hotplate technology stove which I use for my daily cooking and it is acting as a mini baking oven when overturned.
I simply cover any of my AMC pots and pans of 20cm or 24cm in diameter (depending on the mudfins batch size) with an overturned Navigenio. With Bluetooth turned on, the baking process is taken care of automatically. As Navigenio is light and portable, I can bake at the dining table or any preferred area at home, making it easy for any kids baking project where bigger space is required, rather than being limited at the kitchen top.
Chocolate Banana Muffins or Banana & Peanut Butter Chips Muffins? Both are equally good for the little hands as they are neither to oily nor too crumbly. I wish you can hold and smell them from here. Take your pick!
Chocolate Banana Muffins Recipe (yield 7 muffins 60cm x 45cm) :
- 150 grams Self-Baking Flour
- 1 teaspoon Baking Powder
- A pinch of Salt
- 50 grams Hershey’s Unsweetened Cocoa Powder
- 2 Bananas (mashed)
- 2 mid-size Eggs
- 25 grams Brown Sugar
- 5 tablespoon Olive Oil
Banana & Peanut Butter Chips Muffins Recipe (yield 6 muffins 60cm x 45cm) :
- 150 grams Self-Baking Flour
- 1 teaspoon Baking Powder
- A pinch of Salt
- 100 grams Reese Peanut Butter Chips
- 1 Banana (mashed)
- 2 mid-size Eggs
- 25 grams Brown Sugar
- 5 tablespoon Olive Oil
AMC Healthy Cooking Method :
- Mix flour, baking powder, salt and Hershey’s cocoa powder (or Reese Peanut Butter Chips) in a 20cm Combi Bowl. Whisk mashed banana(s), eggs, brown sugar and olive oil in a 16cm Combi Bowl. Pour wet mixture into the dry mixture. Fold the ingredients until well combined.
- Preheat AMC 24cm 5.0 liter Pot unit with Navigenio heat level “6” to 50°C or “Meat Window”. Use Audiotherm as an indicator by turning it on, place on lid knob, indicating 50°C or “Meat Window”.
- Meanwhile scoop mixture into muffin cups.
- When Audiotherm beeps, turn off both Navigenio & Audiotherm. Remove lid and place pot on the up-turned lid. Arrange muffins into the pre-heated pot.
- Cover pot unit with Navigenio turned upside down. Turn Navigenio on lower heat level “–“. Activate Audiotherm to bake for 10 minutes.
- When Audiotherm beeps, turn off both Navigenio & Audiotherm. Consume within 3 days.
Tips :
