
~ Apple & Orange Juice Extract & Jam ~
Does it sound like a big deal making your own jam? It does to me. Many homemade jams come from the apparent health reason, especially for the diabetics. I made jam incidentally when I was extracting juices from apple and oranges. Since I have discovered homemade jam, I never want to eat store-bought ones again.
Although I consciously opt to practice healthy eating through healthy cooking, I certainly have not been motivated enough to make my own juices and jam, cooked. I always think they are unnecessary until my little girl was attacked by nasty bugs causing her pro-longed cough. In the Chinese tradition, it is believed that raw juices are a big no no for those whom are coughing with phlegm. So, that explains why I explored juice extract with my cooking system. I made apple juice extracts for a week as it is believed to relieve coughs. Cooked juices are better tolerated by sensitive digestive tracts too.
For juices, we usually consume them fresh, raw and chilled. For jams, we often just buy those which are labelled with all the “nos”, namely “no preservatives”, “no colouring”, “no added sugar” etc. However, as I realised that some occasional cooked juices make great health benefits to our body and juice extract residual turns into jam as a by-product without much efforts, I started to make juice extracts and jam more often. These juices taste so good that my little girl would request for apple orange juice despite the fact that she dislikes fresh orange juices.
The same AMC Premium Cooking System used to cook Fatless Lamb Stew is now used to make juice extracts & jams. Juices and residuals are separated with the Softiera set. All I did was literally to place the set into a Pot covered with a Secuquick Softline Lid and cook fully automatically on a Navigenio for 30 minutes. The system is making the cooking process fuss free. Juices are collected in the Softiera Dish while residuals remained in the Softiera Insert, ready to be cooked in a small pot with some sugar added as a form of home preservatives. With such a convenient cooking system, I can make juice extracts everyday with no complaints!
Apple & Orange Juice Extract & Jam Recipe (Yield around 400ml juices & 150ml jam) :
- 2 Apples, Fuji (cleaned with running filtered water & cut into chunks.)
- 2 Oranges, Valencia (peeled and wedged)
- 3 tablespoons Brown Sugar
- 200ml of Water
AMC Healthy Cooking Method :
A. Juice Extract
- Add water to the AMC 20cm 4.0 litre pot.
- Place the pieces of apples and oranges into a 20cm Softiera Insert. Place the Softiera Dish into the pot, followed by the Softiera Insert. Cover with AMC 20cm Secuquick Softline Lid.
- Switch on Navigenio to automatic mode, “A”.
- Turn on Audiotherm and place on Secuquick Softline Lid knob indicating “Turbo” and set for 30 minutes to cook.
- When Audiotherm beeps, turn off both Navigenio & Audiotherm.
- When pot depressurised, remove lid. Gently press the residuals with a hand masher to extract more juice. Let cool and serve juice.
B. Jam Making
- Pour the residuals into a 16cm Benjamin Pot unit. Add brown sugar to the residuals. Gently stir to mix well.
- Switch on Navigenio to automatic mode, “A”. Turn on Audiotherm and place on Lid knob indicating “Carrot” and set for 2 minutes to cook.
- When Audiotherm beeps, turn off both Navigenio & Audiotherm.
- Let cool, store jam into a glass jar and refrigerate.
Tips : Softiera Set comes in 2 sizes, 20cm and 24cm. 20cm Softiera Set can be used in both 20cm and 24cm Pot sizes. 24cm Softiera Set can be used in 24cm Pots. You may use the 20cm set to cook smaller amount of ingredients and the 24cm set to cook larger amount of ingredients. It is all up to your needs!

Store jam in a glass jar and refrigerate. As it is thoroughly cooked through to the temperature of 98°C, it last forever!

The same method can be used on extracting Pineapple Juices when you cook your own jam for pineapple tarts baking for the Chinese New Year! Ong aahh!!!
