~ Stir-fried Red Cabbage with Long Beans ~

I love colourful vegetables. Knowing the fact that they are packed with loads of vitamins and minerals, I try to cook and consume as much a variety as possible. Ever since agriculture for red cabbages were boosted and are available in the market in our country, I have always been attracted to it’s beautiful colour to the extend where I will buy them fresh from the supermarket without a plan to cook them. I’m a weirdo, I know! The only way I consume red cabbages is by cutting them into thin strips for salad. I wish I can do more than that.

As my pre-schooler aged girl who came on board joining us at the dining table eating a little more, cooking style needs a tweak. This recipe appears to be a simple stir-frying dish any Chinese family could easily whip up. I have never tried out any recipe with red cabbages as a main ingredient until a recent post by an aunt appeared on Healthy Cooking for My Family. When I saw the post, I thought it was a brilliant combination of ingredients and that I must cook often and share it here. It means a lot to someone like me who do not have a lot of ideas in sustainable recipes for healthy home cooking on a daily basis, counting in a pre-schooler whom is ready to explore more on the same dining table.

Stir-fried Purple Cabbage with Long Beans Recipe (Serves 2 adults and a pre-schooler) :

  1. 5 cloves Garlic (finely chopped)
  2. 3/4 tablespoon of Cooking Oil
  3. 1 quarter Red Cabbage, approximately 200 grams (slice into 1cm strips)
  4. 1 pack 100 grams Long Beans (chop off both ends & cut 1 inch long)
  5. 1 pack 100 grams Shimeiji Mushrooms (cut off bottom part & separate the stalks)
  6. 1-2 pieces Chinese Fishcakes of Choice, approximately 150 grams (slice into 1/2 cm thick)
  7. 1 small Carrot (sliced diagonally)
  8. 1 teaspoon Oyster Sauce
  9. 30ml Water (to dissolve oyster sauce)
  10. Sprinkles of Black Pepper

AMC Healthy Cooking Method :

  1. Add chopped garlic to an AMC 24cm 3.0 litre Hotpan unit. Preheat Pan unit with Navigenio heat level “3” up to 50°C or “Meat Window”. Use Audiotherm as an indicator by turning it on, place on lid knob/Visiotherm, indicating 50°C or “Meat Window”.
  2. When Audiotherm beeps indicating readiness for stir-frying, remove and turn off Audiotherm. Add oil into Pan unit. Gently stir garlic and add all dripping wet vegetables and fish cakes into the Pan Unit. Stir well and add oyster sauce dissolved with water. Cover Pan unit with lid.
  3. Turn on Navigenio to automatic mode, “A”. Turn on Audiotherm, place on lid knob, indicating 80°C or “Carrot Window” and set 3 minutes to cook.
  4. When Audiotherm beeps, turn off both Navigenio & Audiotherm.
  5. Sprinkle with black pepper, stir gently and serve hot with steamed rice.

Tips :

  1. Add fragrant ingredients like garlic, onion and ginger into Pan unit before turning on any heat source. Preheat Pan unit up to “Meat Window” or 50°C with these ingredients in. This way, a gentle browning effect takes place at an ideal temperature. There will be much less smoke and oil splatter as compared to adding them after oil.
  2. Adjust cooking time preset on Audiotherm for automatic cooking according to your desired texture and likeness. If you have toddlers or young children who prefers softer textured food, you might want to cook the vegetables a couple of minutes longer. It does make a different!
  3. Add carrot slices from 1 small carrot to add 1 more colour to the dish. Another colour makes not harm!

Add garlic into Hotpan unit. Preheat Pan unit up to “Meat Window” or 50°C. This way, there will be much less smoke and oil splattered as compared to adding garlic after oil. Garlic will be slightly browned before oil is added.

Add oil to the preheated Hot Pan with garlic and stir gently.

Add all ingredients, harder ones first followed by softer ones. Pour in the dissolved oyster sauce and stir gently.

Cover lid and set to cook on automatic mode for 3 minutes from “Carrot Window” or 80°C.

With the automatic system, once I know defined the desired texture that suits my family, it can be repeated easily.
